Certain establishments that create a large amount of food waste, such as restaurants and grocery stores, are required to separate their organic waste out for beneficial use. Businesses that fall under these rules include:

  1. All food service establishments in hotels with 150 or more rooms
  2. All food service vendors in arenas and stadiums with seating capacity of at least 15,000
  3. Food manufacturers with a floor area of at least 25,000 square feet
  4. Food wholesalers with a floor area of at least 20,000 square feet

Businesses have three options for complying with these rules, they can: transport the waste to a treatment facility themselves, hiring a carting company to transport the waste to a treatment facility, or they can treat the waste on site.
